Garlic Sweet Potato Mash

Recipe: Garlic Sweet Potato Mash

Ingredients

  • 2 lbs sweet potatoes, peeled & cubed
  • 1 tbsp butter
  • 3 cloves garlic, crushed
  • 1/2 cup skim milk
  • 2 tbsp light sour cream
  • salt and fresh cracked ground pepper, to taste

Instructions

  1. In a large pot boil sweet potatoes in salted water until tender, about 20 minutes. Drain in a colander.
  2. Meanwhile, melt butter and sauté garlic until lightly golden. Return potatoes to the pan, add milk and sour cream; mash until smooth and creamy. Adjust salt and pepper to taste.

Shrimp with Garlic, Lemon, and Parsley

Recipe: Shrimp with Garlic, Lemon, and Parsley

Ingredients

  • 3 Tbs. olive oil
  • 6 garlic cloves, finely minced
  • 1 tsp. red pepper flakes
  • 1 tsp. sweet paprika
  • 1 lb. medium shrimp, peeled and deveined
  • 2 Tbs. fresh lemon juice
  • 2 Tbs. dry white wine
  • salt and freshly ground black pepper, to taste
  • 2 Tbs. chopped fresh parsley
  • 8 oz (dry weight) pasta (linguine works well)

Instructions

  1. Start cooking your pasta.
  2. In a sauté pan over medium heat, warm the olive oil. Add the garlic, red pepper flakes and paprika and sauté for 1 minute until fragrant.
  3. Increase the heat to high, add the shrimp, lemon juice and dry white wine, stir well, and sauté until the shrimp turn pink and are opaque throughout, about 3-5 minutes.
  4. Season with salt and black pepper, sprinkle with the parsley and serve over pasta.

Pizza with Kale, Roasted Garlic & Four Cheeses

Recipe: Pizza with Kale, Roasted Garlic & Four Cheeses

Ingredients

  • your favorite pizza dough
  • 2 big handfuls of kale, sauteed in some olive oil until tender, then chopped
  • cloves from about half a head of roasted garlic, thickly sliced
  • 3 cups of grated cheese, a mix of fontina, asiago, provolone and mozzarella

Instructions

  1. Preheat the oven to 500 degrees F with a baking stone inside (I place my baking stone on a rack, and place the rack on the lowest slot in the oven.)
  2. Generously dust a pizza peel (or the back of a sheet pan) with coarse cornmeal or flour. Roll or stretch your pizza dough out to a 12 to 14 inch circle directly on the peel (or pan.)
  3. Top the crust with half the grated cheese, then half the sliced roasted garlic and half the sauteed kale. Repeat with another layer of cheese, garlic, and kale.
  4. Bake in the oven for about 8 minutes, or until the cheese is bubbly and just starting to brown, and the crust is golden brown.

Roasted Garlic

Recipe: Roasted Garlic

Ingredients

  • 1 Head of Garlic
  • Extra Virgin Olive Oil
  • Salt
  • Black Pepper

Instructions

  1. Preheat oven to 400F
  2. Cut head of garlic in half crosswise
  3. Place both halves on foil, cut side up
  4. Drizzle with oil and sprinkle with salt and pepper
  5. Wrap garlic in the foil
  6. Bake for 60 minutes
  7. Remove roasted cloves

Personal Notes

The roasted garlic can be spread on bread, mixed in mashed potatoes, or mixed in hummus.

Oven-Roasted Cauliflower with Garlic, Olive Oil and Lemon Juice

Recipe: Oven-Roasted Cauliflower with Garlic, Olive Oil and Lemon Juice

Ingredients

  • 5 to 6 cups cauliflower florets, about 1 1/2 inches in diameter (from 1 medium cauliflower)
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon sliced garlic
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons grated Parmesan
  • Chopped chives, for garnish

Instructions

  1. Preheat the oven to 500 degrees F.
  2. Place the cauliflower florets in a large saute pan or a roasting pan. Drizzle the olive oil over the cauliflower, and season with the garlic, lemon juice, salt and pepper. Place the saute/roasting pan in the oven and cook for 25 minutes, stirring occasionally to ensure even roasting. Remove from the oven and sprinkle with the Parmesan. Garnish with chopped chives and serve immediately while still warm.
