Recipe: Fig, Banana, and Nut Panini


  • 8 slices raisin bread
  • 8 tablespoons sunbutter (or almond butter or peanut butter)
  • 2 bananas, sliced into flat strips
  • 4 fresh figs, sliced widthwise into rounds


  1. Turn a panini maker (or Forman Grill) on low.
  2. Spread 1 tablespoons of nut butter on each slice of bread.
  3. Lay the fig slices on one side and top with the banana strips.
  4. Place the top on and press gently to close.
  5. Place the sandwich on the panini maker and cook for 5 minutes.
